Jury Duty XIV & Christmas Eve Posole

Time to really celebrate Christmas … with a bowl of posole
No jury duty, of course on Christmas Day and no jury duty on December 26.
So now the important stuff – POSOLE! Posole is a hominy based stew with pork, chicken, beef, or even lamb. The common posole in New Mexico is pork and it can bring you good luck for the New Year.
Many brave people make it, but I just run down to Garcia’s Kitchen on 4th Street in Albuquerque and buy some of the best posole I have ever had. It comes with a little container of oregano, another of diced onions, and another little container of chile flakes. I usually get refried beans too with tortillas.
Tamales are yummy during the holidays too. I have seen them in all kinds of flavors including dessert tamales. Pork and chicken are most common but there are some wonderful vegetarian ones that are squash and corn based. Tamales are steamed after being made for about 30 minutes.
Top off this great but simple meal with bizcochitos – the New Mexico State Cookie. You might also have flan or natillas – a custard wonder. It all is followed by Mexican Hot Chocolate – think spicy hot chocolate.
We in New Mexico are fortunate to have the Mexican influence in our delicious foods. It is a good way the say Merry Christmas!
